We use high-quality oil-packed tuna or mackerel. Not the cheap stuff. Spanish ventresca or Moroccan sardines in harissa oil.
Powdered cilantro. We grind freeze-dried cilantro from our garden. Sprinkle it on like fairy dust. It's 90% as good as fresh and weighs nothing.
